Nana's Slice

"This slice is an old favourite my Nana used to make. Keep the base ingredients the same, but feel free to chop and change the extras as you please. With all the various ingredients, it's a great way to get the kids involved too!" - Al Brown

Ingredients

½ Cup Self Raising Flour
½ Cup Wholemeal Flour
1 Cup Rolled Oats
1 Cup Desiccated Coconut
½ Cup Brown Sugar
½ Cup Sunflower Seeds
2 Tbl Sesame Seeds
1 Cup Dried Cranberries
1 Cup Dark Chocolate (roughly chopped)
½ Cup Crunchy Peanut Butter (good quality – like Pic’s or Fix and Fogg)
¼ Cup Golden Syrup
80gm Butter
1 Egg

Method

Preheat oven to 160 degrees. Line a 22cm x 25cm slice tin with baking paper.

Sift the flours into a bowl, and then add in the oats, coconut, brown sugar, sunfower seeds, sesame seeds, cranberries and dark chocolate chunks and mix to combine.

Place the peanut butter, golden syrup and butter in a saucepan over low heat. Cook for about 2 minutes, stirring often, until the butter is melted and everything is combined. Take off the heat and set aside to cool for 5 minutes, then beat in the egg.

Pour wet mix into dry ingredients. Mix thoroughly with clean hands, to form a wet crumble-like consistency. Press firmly into lined slice tin, then bake for 20 minutes, until golden on top. Remove from the oven, and cool completely. Using a serrated knife, cut into pieces and store in an airtight container until required.
