Al's Pink Stuff

"This is basically a chocolate coconut slice. It’s called ‘Pink Stuff’, because when I was growing up our neighbour’s son, who was a mate of mine, used to call it that when his Mum added food colouring to the icing. Anyhow, it’s not a particularly interesting story, but it is a particularly delicious slice." - Al Brown

Step 1. Base

Ingredients

- 1 ½ Cups Flour
- 1 ½ Cups Shredded Coconut
- 3/4 Cup Fine Coconut
- 3/4 Cup Sugar
- 5 Tbl Cocoa
- 1 1/2 tsp Baking Powder
- 250 gm Butter (melted)

Method

Pre heat your oven to 180 degrees.
Grease and line a 20cm x 30cm slice tin.
Add all dry ingredients to a large mixing bowl and combine. Stir in the melted butter and incorporate with a wooden spoon. Press the base mix evenly into your tin and bake for 20 minutes in the pre-heated oven. Cool.

Step 2. Icing

Ingredients

- 3 Cups Icing Sugar
- 2 Cups Shredded Coconut
- 1 Cup Fine Coconut
- 1 tsp Vanilla Essence
- 150 gm Butter (melted)
- 6 drops Red Food Colouring

Method

Mix all ingredients in a medium-sized bowl with a wooden spoon until thoroughly combined. The icing should have an even pink colour. Spread icing evenly over the cooled base, and allow to set before slicing.
